Produced in Santiago Matatlan, Oaxaca by Maestro Mezcalero Benigno Sánchez Gatica in 2014 from a field blend of Coyote (A. lyobaa), Tepeztate (A. marmorata), and Blanco (A. americana). The Hermanos Sanchez Altamirano are 4th generation Mezcaleros learned from their late father Faustino Sanchez. The distillery uses some unique techniques, specifically the use of Hebradora (wood chipper) and Tahona used in conjunction. Agave is roasted in 10 ton stone lined pits over oak for 3 days and rested another 5. Then it is fed in to a wood chipper. Originating from the town of Candelaria Yegolé in the Zoquitlan region of Oaxaca, this is one of the rarer Silvestre agaves and the first Jabali we ever stocked at K&L.
