The Ariston's vineyards are vastly different than those of the other Blanc de Blancs producers that we carry. The steeper slopes, less chalk, and more fossils in the soil of Brouillet make for a rich, creamy style Chardonnay Champagne that will appeal to just about anyone. This all estate-grown wine is aged for an incredible five years on the lees before release, giving real depth and an honest, toasty flavor. Fans of Billecart-Salmon take note: this is an elegant, dry style that is made entirely from estate-grown fruit in Brouillet. This Champagne is a half and half blend of Pinot Noir and Meunier. The color comes from 12% Meunier that is vinified red, from an old-vine plot that gets quite ripe. This non-vintage Champagne is composed of 45% Chardonnay, 40% Pinot Noir and 15% Meunier and is exactly the same wine as the LP Brut, except for a big increase in dosage. Dosage is the sugar that is added after the yeast left over from the natural secondary fermentation in the bottle is removed. The Brut has about 12 grams per liter, while the demi-sec has 45 grams.
