The stave selection here isn't so much the focus as the fact that their low barrel entry helps define the end product with it's focus on vanilla, sweetness, and caramelized wood sugars. On December 22nd we received a phone call from our friends at Heaven Hill with news that someone fell through on their barrel of Elijah Craig Barrel Proof and they asked if we wanted it. We happily snapped up this Christmas Miracle for our customers! Barrel #6661215 was barreled on 1/2/14, aged in Rickhouse K on Floor 2 and clocks in at 58.6% ABV and 9 years old. Even though it won't arrive until early 2023, it seemed like the right name for the barrel.
