This incredible bottle is a true unicorn Champagne--all Pinot Gris! This is the only Champagne that I have ever had made exclusively from this variety that is now nearly extinct in the region. The Derot family was the first to plant Chardonnay out on the Western edge of the Marne valley, and the name "Hors Pair" means out of the ordinary, which it is to have a blanc de blanc from this area. It is all estate grown, and entirely fermented in enamel lined iron tanks with an extra year of elevage in those tanks before bottling. This wine is named "bissextile" after leap years- because they can only have the right conditions for making the red wine that goes into this champagne about once every four years. The 14% Pinot Noir comes from a special plot, and is made in Burgundy barrels and added to the 43% Chardonnay and 43% Meunier that is vinified white. The wine has a wonderful pink color, a spicy nose with some wild strawberry fruit and great sourdough toast.
