Made from 100% Debit from hills near the historic town of Šibenik. Taking a minimal approach, before fermentation, the Debit is macerated on its skins for 5 days before being pressed into stainless steel tanks where a spontaneous fermentation takes place using native yeasts. Before fermentation finishes, the wine is bottled and kept on its lees for 5 months. It is then roughly disgorged and recapped.
