"Aged in French oak wine barrels for twelve months with distinct characteristics of fruit and subtle oak" sounds more like a description of wine than beer. However, Temptation is indeed beer. From the brewery: "Technically, this is neither an ale nor a lager. The base recipe is for a Golden Ale, but we do the primary fermentation with 100% brettanomyces. The base beer is a Pilsner aged in Sauvignon Blanc barrels with the addition of Sauvignon Blanc grape juice from the 2018 harvest for a secondary fermentation. Production Notes: Chenille is made by co-fermenting our "simple saison" base beer with fresh apple cider must. The resulting beer is super dry, with a light body and fruity notes. We have been releasing a lot of fruited versions of this beer as well, as we've learned that it takes on fruit character exceptionally well, but the unfruited version is what we've been wanting to drink all the time lately.

Cuvée des Jacobins Rouge is a Flemish Sour Ale, red in color with a beguiling balance of malty sweetness and acidic sharpness. It is made from spontaneously fermented and barrel-aged beer of at least 18 months in age. The beer is cooled overnight in a large, shallow metal vessel called a coolship and then fermented and aged in large oak foudres which are made in France and assembled on-site at Bockor.

Tasting Notes: Notes of dark jammy fruits, light baking spice, mild tannins, restrained acidity, wild funk Production Notes: For this beer we sourced vintage 2021 Charbono and Cabernet Sauvignon grapes from Castoro Cellars. An extremely complex but at the same time very refreshing beer. It somehow resembles a hoppy gueuze with a distinct bitterness. Indeed, the Saisons were generously hopped for the well-known keeping properties of hops. Also, they were often dry-hopped, as is the case here. Based loosely on the Smokestack Series’ The Sixth Glass, this abbey-style quadrupel is separated into a number of oak bourbon barrels where it ages for varying lengths of time, some for up to three years. Cherries are added to make up for the angel's share of beer lost during barrel aging. Selected barrels are then blended for optimum flavor. The resulting beer retains only very subtle cherry characteristics, with toffee and vanilla notes coming to the fore.
