This locally made Bourbon is a true grain to glass craft product. It's 70% corn, 25% wheat and 5% malted barley. The sweet wheat gives a rich and rounded profile akin to Maker's Mark. It's full of vanilla, pepper, and sweet caramel. A combination of 30 and 50 gallon mid-char barrels gives this just the right amount of wood for its 3-year-old body.

Sonoma Distilling Company's latest Distiller's Edition release is the wonderful wheat whiskey. Made of 80% wheat, grown in CA and Canada, and 20% malted rye grown in the UK, this unique dram is aged 3 years in used American oak barrels and finished for about 8 months in Cognac barrels. The results are a singularly rich and creamy whisky with a great rye spice and stonefruit, toffee and vanilla notes coming through from the Cognac barrels. Super limited in production, this won't be around past summer!

One of the absolute best creative twists to whisky to come to market. This mashbill is made up of 80% rye, 10% wheat, and 10% cherrywood smoked malted barley. The results are outstanding. The smoke influence is gentle and very approachable. It drinks a bit like a Manhattan without any additions or mixing. It's nutty, sweet, and complex with just a hint of smoke and fruit. Not to be missed!

Like its Cherrywood-smoked rye cousin, this bourbon has just the perfect level of woodsmoke influence. It's 67% corn, 20% rye, and 13% cherrywood smoked barley. A highly unusual smoke for whiskey, but common in cooking, the gastronomic effects are excellent. This pairs remarkably well with food and offers tons of complexity for drinking on its own. Never overpowering, the woodsmoke plays really well with the sweet corn and sweet vanillins of the charred oak barrels. Your cocktailing applications for this are endless.
