This extremely special barrel of rum was distilled by the wonderful master Faubert Casimir. His 50 hectare policulture farm is a stunning example of the rural rum tradition in Haiti. The cane grows among groves of mango, palm, banana, and lime. The heirloom soft cane, usually Hawaii Blanche and Rouge are cultivated by hand and fermented naturally in wooden vats in open conditions before being distilled on hand made pot stills. Translating as "With Angels" in the native Haitian Creole - Ak Zanj is an aged spirit produced from 100% cane juice from a low yielding heirloom varital called Madame Mueze. The cane is hand harvested by machete and then distilled in 60+ year old copper pot creole stills.
