Les Vignerons de Fontès is a cooperative winemaking facility in the hills outside the village of Pezenas in the Languedoc. Oenologist Corinne Pastourel oversees the project, which has a host of growers spread throughout the region over a range of soils including schist, basalt, limestone and clay. This delightful salmon-pink wine is produced using the traditional saignée process. After macerating on the skins for approximately 10 hours, the juice is then pumped off and fermented in temperature-controlled, stainless steel tanks. What is Clarete? Why is this classified as a Rose? Clarete is a tradition style of wine making in Spain. It is a co fermentaion of red and white varietals. The wine is this case, it is 50% Garnacha & Garnacha Blanca, and after fermentation the wine then spends 12 days with skin contact. It next spends six months aging in Amphora.
