"Aged in French oak wine barrels for twelve months with distinct characteristics of fruit and subtle oak" sounds more like a description of wine than beer. However, Temptation is indeed beer. Temptation is a Blonde Ale aged in French oak chardonnay barrels with Brettanomyces. Flavors of wine and oak absorb into the brew throughout its aging. Temptation is re-fermented in the bottle to create its carbonation--a process commonly used to make fine champagne and sparkling wine. Spent yeast forms a thin layer of sediment to remain in the bottle. 7.25%ABV / 1....

Using a blend of Organic & Biodynamic Wild Heirloom Golden Apples from the Astigarraga appelation, this Basque cider is one of the region's finest. Freshly hand-picked wild apples are fed via a gentle water press to a proprietary crusher for first-press juice only (similar to Extra Virgin Olive Oil) before being moved to wooden barrels for aging and natural fermentation. There are no other ingredients other than first-press juice and natural wild yeasts from the apples. Aged five months in large neutral wooden barrels called "Kulepas." The nose of this i...

This crisp, bright, tangy yet ultimately fresh and appley cider really hits the spot. The balance between rich, phenolic, fine bitter notes, and bright, sour apple high tones is spot on. In Asturias they drink more sidra than anywhere else in Spain (possibly in Europe?) and judging by the quality of this bottling, I can see why! (Joe Manekin, K&L Spanish & Portuguese wine buyer)

Luis Acebal is a fourth-generation cider maker in Asturias, using native Asturian varietals. These are bone dry, acid-driven ciders fermented spontaneously on the lees, and bottled without fining or clarification. Traditional Asturian ciders are poured from high overheard to generate a fine mousse, as these ciders are typically still. Since the bubbles dissipate quickly, the cider should be consumed in small pours immediately after serving. This ritual is repeated multiple times throughout. But if you're not into the flair (or the attendant mess), you ca...

Wine Enthusiast: "From a former rock-star sommelier of the Parisian wine scene, this slightly sweet cider is produced from the fruit of apple trees more than 50 years old. Tones of baked apple drizzled with honey beg to be paired with warm apple pie à la mode. Don’t let the sweetness fool you—there’s enough tannin and acid to please even dry-seeking palates. (AP)" (09/2015) K&L Notes: A sommelier by training, in 1992 Eric took over his family's estate and orchards. Taking over the 19 hectares family property of Château de Hauteville, Bordelet planted 22 additional hectares orchards in fields that had been fallow, and then transitioned the property to biodynamic practices. Like great wine...

Wine Enthusiast: "This profound, off-dry sparkling pear cider from Normandy comes from biodynamically farmed, 300-year-old trees." From the producer: "The legendary Newtown Pippin has a long, illustrious history in our country. Its rich aromatic flavor results in a complex and flavorful cider. This cider is wild fermented to complete dryness in neutral red wine barrels. Our cider is bottle conditioned, with a small amount of fresh juice added back during bottling for natural carbonation. As a...

About the producer: "Lassen Traditional Cider was founded by Ben Nielsen. Ben's love of fermentation began when he started brewing beer in college. After brewing extensively for his adult life, around 2005 he began delving into cider in an effort to use the free fruit from a neighbor's backyard apples trees in Corvallis, OR. After a couple years, this morphed into an annual cider pressing party where all his friends would bring apples to press or just help out. So of course, the neighbor's apples weren't enough after a while. Unused trees in yards all ov...

It has everything you need to make a well rounded, complex, and flavorful cider with the perfect balance of acid, tannin, and aromatics. It originally hails from England, but these apples were sustainably grown at Wombat Flats in the Willamette Valley in Oregon. The apples were pressed during the harvest season. The cider was fermented fully dry in neutral red wine barrels with native ...

From the brewery: "Announcing Gathering Tart Cherries & Peaches! We began this beer with tart cherries from Samascott Orchards in Kinderhook, NY and peaches from Wright’s Farm in Gardiner, NY. The fruit underwent a carbonic maceration and spontaneous autofermentation before blending with our favorite barrels of aged sour beer. The result is bright balanced acidity, kriek-like overtones of cherry and cinnamon, and tannic peach skin on the palate."

Though six or seven breweries make saisons, Saison Dupont is the undisputed classic of the style. It comes from an artisanal brewery that is also a working farm (eggs are sold in the executive offices!), where they produce beers with exquisitely handmade character and "unruly, clumpy yeast." When Saison Dupont first arrived in the United States, we had to do quite a bit of explaining about the look of the beer. The brewery has cultured their yeast for taste and aromatic qualities. Because Dupont basically only sells beer direct from their brewery, they h...

Beatification is a unique beer and is inspired by breweries in the Lambic region of Belgium and, especially, our friends at Cantillon. It is 100% spontaneously fermented, meaning yeast is not added. Once the beer is brewed, it is transferred to a coolship, koelschip, or “horny” tank located in our barrel room at the pub and in the funky brewhouse in Windsor. There, the beer sits overnight and collects whatever funky wild yeast and bacteria may be living in the room. The next day it is transferred to oak wine barrels, where it ferments wildly and ages any...

Because of the increasing success, they started to commercialise this 'cadeau' but kept the name.
