Our seasonal oak aged organic peach beer is brewed with local Oregon fruit. Peche 'n Brett is brewed and refermented with the peaches in our Seizoen Bretta. One and a half pound of peaches are added to each gallon of Bretta to produce a secondary fermentation resulting in complex peach aroma and flavor, hop balance and subtle malt character, followed up with brettanomyces and oak derived fruity dryness. Final refermentation with pear juice provides natural carbonation with added aromas and flavors in the bottle. (Brewery Notes)

Tasting Notes: Notes of dark jammy fruits, light baking spice, mild tannins, restrained acidity, wild funk Production Notes: For this beer we sourced vintage 2021 Charbono and Cabernet Sauvignon grapes from Castoro Cellars. After a short fermentation we pressed the juice from the grape skins, and added that pomace into barrels of our simple saison and Admiral saison. After months of aging in the barrel the resulting wild ale is full of wine grape character while retaining that signature Cellador funk and balance of flavors.

Horchata is a traditional, sweet, milky drink originating in Spain and Latin America that has become quite popular in Southern California, particularly with Mexican cuisine. Our homage to the traditionally non-alcoholic drink is a blonde ale brewed with a heavy dosing of rice, cinnamon and vanilla along with lactose for a little extra creamy character. These ingredients meld together to create a taste and experience that hints at horchata, but it's much more than that. The flavor is hard to describe, but for those who know it, you know you love it.
