The Assiduous wines are a perfect example of how non-interventionist, or so-called “hands-off” winemaking is actually very much hands-on! With a guiding principle of less is more when it comes to manipulative winemaking, Keegan Mayo is essentially making natural wines, but is not dogmatic about the process and not entirely comfortable with the label.
