The small appellation of Marcillac sits on the eastern edge of the region we know as the Sud-Ouest. Marcillac's main grape is Mansois (aka Fer Servadou and/or Braucol) and it must make up 80% of all appellation wines. The vineyards of Cahors date back to the Roman occupation, making them among some of the oldest in France. Nicknamed the "black wine" because of its beautiful opaque color, wines from Cahors were historically used to darken the color of Bordeaux claret. This 100% Malbec was sourced from 35-year-old vines, harvested by hand, and created, according to the winery, "using an unprecedented technique: it is aged in a limestone vat, allowing the grapes to reflect the story of their birthplace. In order to create this vat, the Croisilles hired a local artisan to carve the vat from a limestone rock. The grapes are sourced from a parcel of land with Siderolithic limestone soil whose altitude is 300 meters (approximately 984 feet).
