Domaine de la Colombe is based in the village of Saint-Maximin-la-Sainte-Baume, located at elevations between 900 and 1,300 feet. The terroir includes clay-limestone soils in combination with sandier soils in the valley. The higher elevations combined with full sun exposure allow for full ripeness without sacrificing acidic balance and texture. It's a classic patio wine for aperitifs or lightly grilled seafood dishes.

This rosé comes from a handful of parcels that total seven hectares of vineyards planted in clay and limestone soils, on a gentle north-northwest-facing slope. Grenache-dominated, with smaller percentages of Mourvedre and Cinsault. Like the Cassis Blanc, the wine is taut, fresh and slightly saline. This mineral driven white hails from the hallowed vineyards of St-Tropez. A classic blend of Ugni Blanc, Colombard and Rolle, it has aromas of lemon grass, aniseed and white flowers. Lovely acidity and wet stone nuances round out the palate. There are not a lot of white Provencal wines in the market, which is a shame because they are wonderful aperitifs and are equally perfect with roasted meaty fish or a bowl of moules and frites.
