This Piemontese classic is made with roots and herbs gathered locally. Based in Northern Piedmont, the Noveis has a neutral grain base and uses gentian, wormwood, yarrow, quinquina, rhubarb, anise seed, orange peel among other unique botanicals. The concoction is rested in barrel for over a year before bottling. The result is a surprisingly balanced and complex bitter liqueur that hints, although not overtly so, at it's pre-alpine origins.
