Reticent but pure aromas and flavors of lemon drop, minerals and crushed stone. Concentrated, fresh, vibrant and quite tight, with terrific density and sappiness. Firm acids and superb mineral cut bring this wine's flavors to an even higher level of intensity. Coats the palate with powdered stone on the aftertaste. This is remarkable for village wine but then these vines in Ormeau are largely a century old (Ente told me has only started replacing missing vines in the last four years) and the yield in 2005 was just 25 hectoliters per hectare. It’s always one of the more seductive wines early on, with sweet, velvety tannins, a plush, succulent mouthfeel, full-bodied splendor and majestic texture. Robert Parker's Wine Advocate: "A remarkable wine, the 2010 Shafer Cabernet Sauvignon Hillside Select has gone from strength to strength since it was in cask. It is stunningly rich, with classic, fragrant notes of blackcurrants, blackberries, vanilla, graphite and spring flowers. It exhibits an opaque purple color, with a full-bodied, massive mouthfeel, but no heaviness, and again, a flawless integration of acidity, tannin, alcohol and wood. It’s classic California Cabernet, but beautifully put together, showing impeccable craftsmanship and fabulous potential. This is obviously a very young, infantile style of Cabernet that won’t hit its prime for at least another decade and last close to half a century, based on how older vintages that were less well-endowed have matured from Shafer. Robert Parker's Wine Advocate: "The 2005 Cabernet Sauvignon at age ten is still a young, vibrant, dense ruby/purple -colored wine with lots of classic cassis fruit and a touch of earth undertones. It offers relatively soft and silky tannins by the standards of Montelena, but they’re there. It is full-bodied, rich and impressive. Cabernet Sauvignon from the northern end of the Napa Valley in Calistoga tends to be the St.-Estèphe of Napa. This wine is certainly one of the great ones. Bid on this bottle of 1986 Mouton Rothschild, Pauillac (100JS, 100RP, 99VN, 99WS, 98ST). Robert Parker's Wine Advocate: "The 1986 Mouton-Rothschild is a blend of 80% Cabernet Sauvignon, 10% Merlot, 8% Cabernet Franc and 2% Petit Verdot that was picked from 2 October until 16 October. Winemaker Philippe Dhalluin, who was not working at the property back then, told me that the pH was fairly low at 3.54 when it is usually around 3.75, due to the natural tartaric acid in the vines. It has a powerful and intense bouquet as always: exemplary graphite and cedar scents, a touch of black pepper and incense. It seems to unfurl in the glass, like a motor revving its engine. The palate is beautifully balanced with its trademark firm tannic structure, a Mouton-Rothschild with backbone and masculinity. Layers of black fruit intermingling with mint and graphite, a hint of licorice emanating from the Merlot, gently fanning out and my God, it is incredibly long. It is not like the 1985 Mouton-Rothschil

Robert Parker's Wine Advocate: "In terms of the brilliant complexity and nobility of the aromatics, scorched earth, black currants, plums, charcoal, cedar, and spices, the 1990 offers an aromatic explosion that is unparalleled. It is always fascinating to taste this wine next to the 1989, which is a monumental effort, but much more backward and denser, without the aromatic complexity of the 1990. The 1990 put on weight after bottling, and is currently rich, full-bodied, opulent, even flamboyant by Haut Brion’s standards. It is an incredible expression of a noble terroir in a top vintage. While it has been fully mature for a number of years, it does not reveal any bricking at the edge, and I suspect it will stay at this level for another 10-15 years ... but why wait? Bid on this 3-bottle lot of 1997 Domaine Jean-Louis Chave Hermitage (95ST, 94RP, 93WS). Stephen Tanzer's International Wine Cellar: "The “Bollito not boiled” is one of Bottura’s classic dishes (seven different cuts of beef slowly cooked—for 36 hours—at a lower-than-usual temperature), while the “Beautiful, psychedelic…” veal creation is a far more modern Pollock-esque take on meat, but both match splendidly with Chave’s heavenly 1997 Hermitage Rouge. I’m not much for extremely rich, almost fat reds (and ’97 pushed the envelope) but this wine has aged magnificently and comes across as plush yet graceful, a neat trick. Stylishly supple and glyceral, it overpowers neither the veal nor the bollito. (ID)" (12/2014)

Monica Larner updates on the state of Biondi Santi in 2014: "Perhaps the most iconic image in Montalcino is that of the lanky Franco Biondi Santi walking, cane in hand, down the cypress-lined drive that leads to his beloved Il Greppo estate. It's painful to think he no longer exists in that tight corridor of shade between the trees. The Brunello pioneer died in April 2013, at 92 years of age. Today, the imposing figure who greets you past the tree line belongs to his son, Jacopo Biondi Santi. The legacy of this estate and the guardianship of Montalcino-s most prized wine tradition now rests squarely on his shoulders. The bouquet evokes a top Left Bank Bordeaux in a great vintage. Not surprisingly, the Cabernet Sauvignon in the 1996 is very high at 80%. Every bit as compelling on the palate, the 1996 simply exudes class. I am not sure words alone can capture just how vivid the wine is at twenty years of age. Graphite, smoke, tobacco, licorice and a core of dark fruit unfold on the palate as the 1996 shows off its pedigree. Readers lucky enough to own it can look forward to another two decades plus of exceptional drinking. The 1996 is an uber-classic, Médoc-leaning Monte Bello. What a wine! (AG)" (07/2016)

Having tasted it four times in Bordeaux, and rating it perfect three times and 99 the fourth time, this final blend of 51% Merlot, 47.5% Cabernet Sauvignon, and 1.5% Petit Verdot is perfection in a bottle. Tipping the scales at 14.5% natural alcohol, there are 8,000 cases of it. Its sublime elegance, the power, the medium to full-bodied texture, the silky tannins, the subtle notes of smoke, lead pencil shavings, black currants, charcoal, camphor, blueberry and cassis fruit are all remarkable. No settling was done to the juices—they were fermented as “dirty” as possible and, as usual, they were not racked.
