2016 Smockshop (Hiyu) "Fionn" Columbia Valley Zinfandel

Winemaker's Notes: "Fionn is from the steepest part of the vineyard in the desert. This part of the site is planted to Zinfandel and filled with basalt cobbles. The vines are half the size of those on the lower part of the site. This was fermented in open top vats, whole cluster and tread by foot once a day. After three weeks it was pressed in a basket press directly to older barrels. The wine aged in the barrels for 14 months, on the lees, without any additions before being bottled by gravity. Winemaker's Notes: "This wine is an extension of the Nattura Sauvignon Blanc process. The wine is destemmed and fermented on skins for a month. The skins are not worked hard, they are included in order to gain all the aromatics possible from the fruit, and to promote a fine thread of phenolics to keep a tension and length in the final wine. Bottled straight after malolactic with no Sulphur addition, this wine is almost in the rawest form possible. It is cloudy and this adds to the overall textural experience."

89-91 points Robert Parker's Wine Advocate: "The 2016 Puligny Montrachet 1er Cru Champ Gains, matured in up to 35% new oak, was showing a touch of reduction on the nose like the En Remilly, although it was far easier to discern the intense citrus and Granny Smith apple scents underneath. The palate is well balanced with a fine line of acidity, lightly honeyed fruit, not a complex Champs Gain but one endowed with nascent energy and there is a pleasant prickle of spice on the finish. Clos Ste-Magdeleine farms organically in the ancient fishing village of Cassis in Provence, which importer Kermit Lynch describes as "an earthly paradise". Only a handful of estates are fortunate enough to produce Cassis AOC wines, and the Sack-Zafiropulos family at Clos Ste-Magdeleine has been at it for four generations. English Harbor 5 year old Antigua Rum 750ml (ships as 1.5L)

Molasses is fermented for 24 to 36 hours in open-top fermenters using a mix of commercial and wild yeast. A five-column continuous still is used for distillation, one of only two copper continuous stills in the Caribbean. The column stills produce a lighter style of spirit that is full of character and intense in flavor. Maturation takes place in warehouses without temperature control using ex-bourbon and Tennessee whiskey barrels. The resulting rum is dry and complex rum perfect for sipping, punches, and daiquiris.
