90 points Robert Parker's Wine Advocate for this sparkling wine from Victoria and Tasmania: "The Non-Vintage Brut Tache is a delightful, well-priced sparkling wine composed of 52% Chardonnay, 41% Pinot Noir, and 7% Pinot Meunier. A dash of red wine liqueur is added to the finished tirage wine at disgorgement to create the salmon pink color. The nose offers rose petal, peach, apricot, and wheat thin scents leading to a sparkler with a steady, persistent stream of small bubbles and red berry and nutty flavors. On the palate the wine is dry and refreshing, with a long, clean finish." (10/07) According to Wine & Spirits: "The bubbles look tiny but they power the strawberry and cherry fruit in this light pink sparkler, a brisk cut that leaves the finish clean. For rustic country pâté." (10/07) According to the Wine Spectator: "Pale pink in color, this dry, creamy-textured sparkler shows pretty watermelon and toast flavors. Drink now." (11/06) Taché is a French word meaning ‘stained’ and refers to the rare winemaking method used since 1985 at Taltarni to create this fine rosé-colored sparkling wine. Its delicate salmon pink color is achieved by adding a dash of red wine liqueur to the finished tirage wine at disgorgement. Crafted from a traditional blend of chardonnay (54%), pinot noir (36%) and pinot meunier (10%), Taltarni Brut Taché is bottle fermented and matured for a minimum of 18 months according to traditional ‘Mêthode Champenoise’ practices. Bright, seductive, sophisticated, this sensational dry sparkling rosé cuveé will enliven your festive holiday soireés with colorful merriment and clever panache. Sourced from select fruit cultivated in Tasmania and Victoria, South Australia, the Taltarni is artfully blended from Chardonnay, Pinot Noir and Pinot Meunier, bottle-fermented and matured on yeast lees in the traditional manner. The lovely color is a result of the rather obscure 'taché' method, in which a small dosage of cabernet sauvignon is added to give a beautiful blush to the final blend. Brimming with mousse-like bubbles, this crisp sparkler captivates the nose with aromas of roses, red currants, fresh strawberries and rusk, the perfect bubbly to both host a crowd and toast aloud! Seriously satisfying stuff.

This is one of my go-to sparkling wines that I seem to never get tired of drinking! Dry, but with a light fruitiness, coupled with a delicately creamy mid-palate that makes this rosé bubbly the ideal choice with charcuterie, Chinese food, potato chips, you name it!

- While it is true that the greatest strides in Australian winemaking have come in the last 30 years or so, commercial viticulture began as early as the 1820s and has developed uninterrupted ever since. The majority of the great wine regions are in the southeastern area of the continent, including Barossa Valley, Clare Valley, McLaren Vale, and Coonawarra in South Australia; Yarra Yarra Valley and Pyrenees in Victoria; and the Upper and Lower Hunter Valleys in New South Wales. Many of the wines from Southeastern Australia are based on Shiraz or Cabernet Sauvignon and various blends including Grenache and Mourvedre. In Western Australia, along the Margaret River, great strides are being made with Pinot Noir as well as Bordeaux-styled reds. There are also many world-class releases of Chardonnay and Sauvignon Blanc from the land Down Under, where Riesling also enjoys international acclaim. While many equate Aussie wines with “value,” there are more than a few extremely rare and pricey options, which never fail to earn the highest ratings from wine publications and critics throughout the world.
