The grapes for Fattoria Felsina's Vin Santo come for the commune of Castelnuova Beradenga, northeast of Siena. Made from malvasia, trebbiano and sangiovese, the grape clusters are air-dried on mats until January or February following the harvest then matured for seven years in small casks and another year in bottle. This Vin Santo is golden-hued with copper highlights and a bouquet of peach, apricot and ripe pineapple. Weighty with velvety smoothness, this beautiful wine is perfect for hard cheeses, even sharp and herbed varieties.
