Production Notes: Chenille is made by co-fermenting our "simple saison" base beer with fresh apple cider must. The resulting beer is super dry, with a light body and fruity notes. We have been releasing a lot of fruited versions of this beer as well, as we've learned that it takes on fruit character exceptionally well, but the unfruited version is what we've been wanting to drink all the time lately.

Beatification is a unique beer and is inspired by breweries in the Lambic region of Belgium and, especially, our friends at Cantillon. It is 100% spontaneously fermented, meaning yeast is not added. Once the beer is brewed, it is transferred to a coolship, koelschip, or “horny” tank located in our barrel room at the pub and in the funky brewhouse in Windsor. There, the beer sits overnight and collects whatever funky wild yeast and bacteria may be living in the room. The next day it is transferred to oak wine barrels, where it ferments wildly and ages any...

From the distributor: "Brasserie du Coteau, newly started by Guillaume Clusel of our Northern Rhone producer, Clusel Roch. Guillaume is now producing beer, along with his childhood friend and sales manager at Clusel Roch, Gaëlle Bonnefond. Called Les Marmots, a term for an overactive child we might call a brat, this organic beer come packaged in beautiful 33 cl bottles." The Blonde has light flavors that contrast with a full and malty body, but never comes across as heavy. Great to pair with roasted meats and a variety of cheeses.

The Solera method (and variations of it) allow the continual blending of multiple vintages of a beer or wine. Deadcrush Solera lived in two of our favorite wine barrels. One barrel of Deadcrush ‘Petite Syrah’ was aged for an additional year, before being blended with a full barrel of Deadcrush ‘Pinot Noir.’ That blend became the Deadcrush Solera released earlier this year. When we bottled it, we emptied half of the beer from each of those two barrels and topped them up with Deadcrush ‘Cabernet Sauvignon’ to continue aging. This release represents the fi...

This Cyser is a cider-mead fusion that gets its charm from a combination of apples, wild-foraged elderberries, and California wildflower honey. The apples were pressed and fermented to dryness, before bottle condition which led to its gorgeous pink color. A truly local California cider, this is a joy to drink and tastes like summer in a bottle.

What is this beautiful creation? Scotch ale brewed with coriander? Who knew it was going to be a match made in heaven? A deep black color with a small ring of head capping it off. Not much to say here (See my review of the Traquair House Ale for my feelings on appearance) What a nose, with a slightly sour note from the coriander used in the brewing process adding dimension to the layers of cocoa-y malt, plum, blueberry and raisin. This is like a scotch blended with a sour. Showing both the rich malty base and a tangy, acidic ribbon from the middle of th...

From the brewery: A cold bottle coated in condensation sits on the arm rest of your wooden patio chair while you lean back to feel the warm wood on your shoulders. The sun hits your face shining above the Skyline Mountains, and an invisible breeze slightly cools the beads of sweat above your brow revived by the summer heat. You open the bottle, hearing the hiss of carbonation and pour it into your chilled glass, releasing the fresh mango aroma. This isn't your typical summer beer. Optimally enjoyed ice cold, the newest release in the Indulgence Series s...
