Production Notes: Chenille is made by co-fermenting our "simple saison" base beer with fresh apple cider must. The resulting beer is super dry, with a light body and fruity notes. We have been releasing a lot of fruited versions of this beer as well, as we've learned that it takes on fruit character exceptionally well, but the unfruited version is what we've been wanting to drink all the time lately.

Beatification is a unique beer and is inspired by breweries in the Lambic region of Belgium and, especially, our friends at Cantillon. It is 100% spontaneously fermented, meaning yeast is not added. Once the beer is brewed, it is transferred to a coolship, koelschip, or “horny” tank located in our barrel room at the pub and in the funky brewhouse in Windsor. If you love beer, and have spent time in Philadelphia, chances are good you've visited the Monk's Cafe, a bar and restaurant specilizing in the beers and cuisine of Belgium. This private label beer is brewed by the family-owned Van Steenberge brewery, just outside Ghent, Belgium. Medium body, red color, somewhat fruity nose, malt flavor with a slight lactic taste. From the brewery: "Although we have made this beer once before, it was only available on our guided tour and for special events. The base beer is a Pilsner aged in Sauvignon Blanc barrels with the addition of Sauvignon Blanc grape juice from the 2018 harvest for a secondary fermentation. The juice and barrels are from Dutton Vineyards in the Russian River wine appellation here in Sonoma County. There is no lactobacillus or pediococcus added to the beer, only brettanomyces.
