This will be one of the most crowd pleasing spirits we've ever brought in from France: this 16 year single barrel exclusive of 70% pear and 30% apple distilled Calvados from the small producer Domaine Pacory. In the Domfrontais region of Normandy, the brandies are generally at least 60% pear. Located on the ferme des Grimaux, the Pacory property has been in the family since 1939, but it wasn't until 1959 that Claude Pacory decided to try to perfect the art of Calvados distillation. The torch was passed to Frédéric in 1986 and he's been carrying the tradi...

At the Ferme Des Grimaux near Mantilly, the Family Pacory has farmed the land since 1939. It wasn't until 1959 that Claude Pacory decided to focus his efforts on perfecting the production of Calvados. Like all the farmers in this area, they'd specialized in the production of apples and pears and the creation of ciders and brandy from their juices, but this focus on brandy was exceptional in this part of Normandy. The results were exceptional. Claude and his 100 hectares were exceptional by all accounts. On their 100 hectare property 700 pear trees and 40...

95 points Vinous: "Pinning down the term hors d’age is a moving target, but this bottling by Michel Huard stands at the older end, with a minimum of 10-year-old spirits, along with a significant percentage that is more than 25 years old. Golden-colored, it opens with a gorgeous, old-time nose - rustic in the best sense of the word. There’s woodiness here, from the nose to the finish, but it’s an attractive virtue, with deep and well-integrated. There’s balanced aromas and flavors of tarte tatin, with notes of pepper and even salted licorice. In the mouth...

Calvados distilled by Didier Lemorton at La Baillée Fétu in Mantilly, in the Domfrontais Region of Normandy. Distilled from pears (up to 80%) and apples. Single distillation occurs on a traveling, wood-fired column still. The spirit in the "Selection" is aged 3-5 years. Aromas of sage, stewed apple and pear, and brioche transition to a drying palate of tobacco and cinnamon. A hint of crème caramels whispers on the finish. Perfect for Calvados cocktailing. Voted #12 on VinePair’s "50 Best Spirits of 2021" 43% ABV

92 points Vinous: "An average of seven years old, Manoir de Montreuil Réserve includes some brandies up to 20 years old in the blend. Light golden in color, the nose is full of baking spices, which carries through the palate, along with honey, vanilla, and apple strudel. The overall flavor is subtle, with a note of chalky minerality on the finish. Like the Sélection, this is very drinkable, but the younger expression has a bit more liveliness and verve. Still a good value. (JW)" (11/2018) K&L Notes: The Giard family has been producing Calvados in the P...

Another in precedent value from the exceptional producer in Mantilly, this time aged over thirty years in ancient casks before being bottled exclusively for K&L. The barrel in question was distilled from 70% pears and 30% apple in 1984 and rested in the gorgeous farmhouse cellars at the Pacory's small estate in the Domfrontais. This region is renowned for it's old pear trees, but the far-flung area is also famous for being one of the last areas to accept AOC control over their spirits. The local reputation for illicit distillation and tax-avoidance, is m...

Julien Frémont is a cider and Calvados in St-George-en-Auge. Situated in the heart of the Pay d'auge, the production is extremely traditional. The cider making process hasn't changed here since the early 1700s - and using the same beautiful wooden press that the family has owned from the start. The only differences between the old way and Julien's way is that he prefers dry cider and the traditional approach was to make sweet cider in this region. Julien tends his orchard using organic and biodynamic principles. Cows graze between the trees to keep the g...
