At the Ferme Des Grimaux near Mantilly, the Family Pacory has farmed the land since 1939. It wasn't until 1959 that Claude Pacory decided to focus his efforts on perfecting the production of Calvados. Calvados distilled by Didier Lemorton at La Baillée Fétu in Mantilly, in the Domfrontais Region of Normandy. Distilled from pears (up to 80%) and apples. Single distillation occurs on a traveling, wood-fired column still. The spirit in the "Selection" is aged 3-5 years. Aromas of sage, stewed apple and pear, and brioche transition to a drying palate of tobacco and cinnamon. A hint of crème caramels whispers on the finish. Perfect for Calvados cocktailing. This 6-year-old is elegant and beautiful, with more than 60% of the blend coming from pear. The apple, however, is what shines through and the Lemorton succeeds, more than any other Calvados we offer, in showcasing the bright acidity of the fruit along with soft touches of baking spice.
