Production Notes: Chenille is made by co-fermenting our "simple saison" base beer with fresh apple cider must. The resulting beer is super dry, with a light body and fruity notes. Coralie Onde is from the winemaking family behind Domaine les Ondines, but opted to start her own project independent of her family estate in 2008. She formed Domaine de la Ganse in Vacqueyras when she purchased some terrific old vine fruit, also taking a small holding when the family estate was split. With close to nine hectares now, Coralie began the organic certification process and was officially certified in 2014. Her vines are aged from fifteen to fifty-five years and the soils are primarily chalky-clay with some galet (river stones).

The Thibon family acquired the Libian property in 1670, and in 1970 Jean-Pierre Thibon decided to wholly focus on wine production.
