The Havard brothers Michel and Hubert make cider from 30 different varieties of apples as well as small batches of calvados. As you go up Camut's range of Calvados you start to see how the immense care they take in the cellar translates to what's in the bottles. The 6-year is fresh, forward, and fruity. We knew that Camut is considered the top producer in Calvados--the crème de la crème of apple spirits. The Camut 12 year, however, blows everything else out of the water; its quality is unreal. The spirit opens with baked apple aromas and then transitions into ripe red apples with some nutty notes from the extensive barrel aging. The Camut line of Calvados always show better with age, as the double distillation, while making them more neutral in their youth, frees the spirit from impurities that show with age. The palate is soft, rich, and oozing with baking spice, intense earth, and cooked pomme fruit. It is the top of the line for 15+ year old Calvados.

Camut's 6 year old is simply astounding. Camut has always been the benchmark for Calvados, and this new batch of 6 year might now even outshine the immortal 12 year old. Crisp, juicy cider notes mix with a modest amount of barrel aging, all working in perfect unison. The acidity of the apples carries through into the spirit, despite being distilled twice.
