The cooking of the agave in the "El Humoso" ("The Smoked One") takes place with a mesquite fire. A portion of the agave is fresh Blue Weber cooking in the traditional style and a portion is smoked. The result is a very delicate smoky aroma (this isn't Islay Scotch!) and tremendous complexity. Aromatic and earthy this Tequila still retains it's bright citrus lines from start to finish, but weaves a tapestry of savory flavors inot the sweetness.
