Here's a sparkling wine brand with a theme we can all get behind for the New Year: Onward! Faith Armstrong Foster is the winemaker behind the wines of Onward. This rare sparkling Malvasia Bianca was handled gently, and transferred from tank to bottle by gravity. Indeed, the gentle process is a must for "Pét-Nat," as the wine is still fermenting. Thus, the wine makes its own natural bubbles, without additional dosage. A particularly rare California sparkling wine produced by Don Baumhefner who had been inspired by late disgorged Bollinger to let his wines rest "en tirage" for years.
