Carboniste sparkling wines are a fresh take on the category, as San Francisco Chronicle wine reporter Esther Mobley described in a December, 2019 feature: "They taste youthful and primary. Extended tirage — who needs it? The wines are also notable for their soft textures. Whereas a typical bottle of Champagne might have 6 bars of pressure — a measurement of the force of the bubbles — the Carboniste wines clock in around 4, which puts them closer to the pressure of Prosecco."
