This wonderful barrel of whisky was distilled on January 4th of 2016 at the original Clear Creek facility in Portland before being filled into refill Oregon oak at a filling proof of 55% abv. Like all McCarthy's whisky it was double distilled on small copper pots from heavily peated Scottish barley, fermented naturally and bottled without the use of additives or chillfiltration. Ransom's Bourbon has been in production since 2008 when they first barreled down their solera system. The unique four grain mashbill comes from grain grown on their organic farm and includes roughly 2/3s corn and a balance of malted barley, rye and wheat. The average age of the solera is about 5 years old and it is uniquely distilled on their direct fire Cognac Alembic stills imported from France. There is simply no other Bourbon like it on the market, but most importantly, it tastes delicious and is well priced to boot.

While the non-alcoholic spirit category continues to explode, it is rare that we actually find a new entrant that excites us. Wilderton, out of Oregon, is making some of the best non-alc spirits we've tasted. The Bittersweet Aperitivo is a ringer for a Campari replacmenet and doesn't suffer from the usual pitfalls of non-alc spirits (most importantly it's not overly reliant on ginger and capsacin to mimic alcohol burn). Freeland Bourbon is Indiana's finest combined with a Pacific Northwest twist. The bourbon gets finished in Portland in Pinot Noir barrels from Elk Cove. This additional aging in wine barrels imparts a slightly exaggerated pepper spice and gentle floral notes to a bourbon that is all full of soft caramel, vanilla and coffee.
