God bless Andrew Symington and Iain Henderson for what they have helped to create at Scotland's smallest distillery. Kilchoman's Collaborative Vattings allow the collaborator to select the amount of sherry influence. While the classic Machir Bay bottling has a small amount of sherry influence, this vatting amps that up to about 15% of the cask blend. The remaining 85% is Bourbon barrel and the resulting balance is a sweet and fruity peated malt with a big dollop fo sweet raisin and spice cake.
