This historic estate, situated in the hills just south of Aix-en-Provence, has been in the hands of the Rougier family for two centuries and holds a virtual monopoly on the appellation of Palette. The Blanc is composed primarily of Clairette, with some Grenache Blanc and other local varieties. The white is fermented in small foudres and is then racked into barriques and left on the lees for one year. It is the product of a very long and cool growing season marked by heavy summer rains in some sectors of the region and then ideal conditions through to harvest. The best wines, though, well, they have always impressed with their laser-like cut and focus. That’s exactly what comes through in the 2004 Dom Pérignon.
