Coralie Onde is from the winemaking family behind Domaine les Ondines, but opted to start her own project independent of her family estate in 2008. She formed Domaine de la Ganse in Vacqueyras when she purchased some terrific old vine fruit, also taking a small holding when the family estate was split. With close to nine hectares now, Coralie began the organic certification process and was officially certified in 2014. Her vines are aged from fifteen to fifty-five years and the soils are primarily chalky-clay with some galet (river stones).

A dark white beer may seem like a contradtion in terms, but not so! Erdinger Weissbier 'dark' is a rich and smooth wheat beer owing its full-bodied flavor to the fine hops and dark malt used in its production. The dark beer specialty is brewed according to an age-old recipe. Its spicy flavor also results from the increased proportion (about 13%) of original wort. Nonetheless, at 5.6% abv, it is not at all a heavy beer. This dark variety also acquires its typical flavor from maturing in the bottle.
