2014 L'Union Sacré "La Passion du Diable - Star Lane Vineyard" Santa Ynez Valley Cabernet Sauvignon

Made by two friends who picked up the tricks of the trade by working at such Central Coast wineries as Sans Liege, Barrel 27, Herman Story and Desperada. In 2012 they struck out on their own to make wine to share with friends. According to the winemakers: "We are not auteurs, adventurers or advocates, we are simply two friends throwing all our weight into making wine worthy of our friends’ and families’ tables. Union Sacre is the bread we break together." The Cabernet Sauvignon for this bottling is destemmed, then fermented in tank. It's aged 16 months on lees in 25% neutral oak and 75% new Boutes barrels. The resulting wine is rich and luscious.

I discovered this wine while visiting the central coast with some colleagues. This a winery that probably few people have heard of and probably fewer have tried due to their small production. Two friends, one from a small town on France, and the other from a small town in Michigan, collaborated in the Central Coast to make this Cabernet Sauvignon. Rich red fruit, silky tannin and bright acid are all found in this wine, but the focus and complexity is truly amazing. This a softer more pretty style of Cabernet that is for the fan of small boutique, hard to find wines.

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.

- Santa Maria and Santa Ynez make up the two AVAs of Santa Barbara County, an area known for its natural beauty and temperate climate. The best grape-growing areas, however, are located on the very coastal reaches of these two appellations, and are cooled by ever-present fog and ocean breezes (it is even cooler and foggier here than Carneros!). As expected, Chardonnay and Pinot Noir thrive while the more inland zones lay claim to Bordeaux varietals and some Rhône blends.
