 Pale gold. Pungent, sharply focused citrus and orchard fruit aromas are complemented by suggestions of brioche, smoky minerals and jasmine, with a hint of melon emerging with air. Silky, nervy and dry, offering taut Meyer lemon and bitter pear skin flavors and a suggestion of truffle. Finishes stony and very long, with lingering smokiness and an echo of white flowers.  Ovaltine, straw, dried flowers and fruits, as well as baked apples on the nose lead the 2005 Cuvee Perle d'Ayala Millésime Brut to a lean, pure, elegant, firmly and freshly structured Champagne of great finesse, with citrus aromas in the long and complex finish.  The 2005 Brut Millèsimé Cuvée Perle d'Ayala is a very beautiful wine to drink now and over the next few years. Scents of brioche, baked apple, pear, apricot and spice give the 2005 much of its warm, resonant personality. Creamy, rich and expressive, the 2005 is one of the better wines I have tasted from Ayala in some time. The 2005 is a bit forward, and, although I don't see it as a long distance runner, it is absolutely delicious today. The Perle d'Ayala is one of the few vintage Champagnes that is aged on the cork prior to its disgorgement. (AG)  (11/2015)
