Sophie Guiraudon is a one woman show, farming 25 acres of vines while running her humble facility in Corbieres. Sophie calls this her "Sunday" wine or "Occasion" wine (Dimanches means Sunday in French) as it is her best parcel selection and oldest vine fruit. The vines for the "Dimanches" are planted on gravelly clay-limestone soils. The cepage is 60% Carignan (80 year old vines), 30% Syrah and 10% Grenache. The deepest and richest of Sophie's wines, this is bold Corbieres with loads of black fruit and minerality. Approachable now but perfect for a few years in the cellar and best savored with friends and loved ones on a timeless day.
