 *One Star* Mildly creamy with a light veneer of yeast overlying a trim touch of green apple fruit, this carefully made Brut is a wine without extremes, and it maintains a comfortable, gently autolyzed focus from front to back. It is nicely balanced and slightly rounded in feel with a steady stream of tiny bubbles, and its very mannerly Méthode Champenoise statement tags it as a versatile sparkler that is as suited to solo sipping as it is to drinking with milder foods.
