Importer Notes: Domaine Gérard Villet, which is located in the oldest AOC in France (1936), has been making wine since 1900. The family run estate is now managed by husband and wife Gérard and Christine. Gérard tends to the vineyards and winemaking, while Christine manages all commercial and administrative aspects of the domaine. In 1988 the domaine converted to organic farming practices and it has not looked back since. The estate owns 5.4 hectares, with half of the vines planted to Chardonnay and the rest comprised of decreasing smaller amounts of Savagnin, Poulsard, Pinot and Trousseau. The "Tradition" is a blend of Chardonnay and Savagnin. The Chardonnay is topped up (ouillé) and made in the Burgundian style while the Savagnin is left to age under veil (sous voile). The result is precise, tangy Chardonnay notes mingled with the rich, spicy, oxidative Savagnin notes. A classic example of Jura flavors.
