Originally established in 1700, the distillery that produces Don Amado is renown throughout the southern Mexican state of Oaxaca as one of the finest producers of premium mezcal. The distillery uses only estate-grown agave to ensure the plant's high sugar levels, and mixes steam into the agave's smoke roasting to smooth out the mezcal's characteristically smoky flavor. "Largo" which means "long" in Spanish is how the folks refer to "Karwinskii" or "cuishe" agave in Santa Catarina Minas, where the distillery is located. Cuishe is known for its exotic and subtle complexity of flavors, a plant-like note bolstered by a nuanced spiciness and mild roasted finish. The finish of the Don Amado Largo is a symphony of sweet agave pulp, baking spices, and mild vegetal goodness. It tastes expensive.

This is a lovely, goes down almost too easily Mezcal that helps to showcase the fruitier side of Mezcal. Bright candied fruit from the Agave in the nose are underlaid with the barest hint of smoke. A creamy mouthfeel is layered with soft fruit and a little hint of spice and a subtle roasted quality. There is a rather dry finish with some heat that leaves the mouth tingling and ready for more.

100% Karwinskii (Cuishe) agave and a gentle steaming process load this Mezcal with sweet, wet earth. If you've ever been in the desert right after a much needed hard rain you'll know what I'm talking about. The smokiness so often associated with Mezcal is quietly sitting in the back of the class, if it shows up at all. The palate is creamy and smooth, but doesn't sacrifice the peppery bite I want from great agave spirits. This is a nuanced and thoughtful Mezcal capable of making a great cocktail or being enjoyed neat.
