 The crème de la crème from the northern Médoc is the 2015 Mouton Rothschild and this incredible wine flirts with perfection. Made from 82% Cabernet Sauvignon, 16% Merlot, and 3% Petit Verdot, this inky purple-colored effort offers sensational Cabernet flare in its crème de cassis, graphite, lead pencil shavings, floral, and Asian spice aromas and flavors. It is full-bodied, dense, and incredibly concentrated, yet still has the sexy, opulent, seductive style of the vintage front and center. It will be a candidate for perfection in 10-12 years and is going to be one of the longest-lived wines in the vintage. Hats off to Philippe Dhalluim and his team for this incredible effort that’s a step up over just about every other northern Médoc out there!  (11/2017)

 The 2015 Mouton-Rothschild is a blend of 82% Cabernet Sauvignon, 16% Merlot and 3% Cabernet Franc matured entirely in new oak, as usual. This represents a relatively high percentage of Merlot simply because, as winemaker Philippe Dhalluin told me, that quality was so good. I afforded my sample four to five minutes to open as it was a little reduced at first, but eventually it reveals a gorgeous, extraordinarily intense bouquet of blackberry, cassis, incense and cold slate aromas. In some ways it reminds me of Latour as much as Mouton Rothschild. The palate is medium-bodied with svelte tannin, perfectly pitched acidity, wonderful tension and impressive length. There is a strong graphite theme running through from start to finish that is little grainy and so it will require preferably a decade in cellar. But what freshness and panache here, a classic Mouton-Rothschild that will live for 50 or 60 years, not a million miles away from say, the 1986 or 2010. Expect this to settle at the top of my banded score once in bottle. (NM)  (4/2016)

 Gorgeously confident and rich in colour, you can see the silkiness in the glass from the first look. This has 11% press wine, which tells you how good the skins were and how gently they extract at first. Winemaker Philippe Dhalluin and team have really succeeded in this vintage. It is beautifully integrated, and full of verve and sexiness, just stopping short of swagger. It approaches the heights of 2015 in the most successful appellations and will age well. Bottled in June, with zero oxygen added at bottling and just 25 ppm of SO2. (JA)  (11/2017)

 Dark, with a lightly mulled edge to the plum and blackberry fruit. Notes of tobacco, menthol and warm paving stone lurk as well. This has quite a bit of bass today, without the overt purity that the 2016 or other young vintages show. But the fruit is certainly there, lingering persistently on the finish. (JM, Web-2017)

 Very racy and refined with super polished tannins and focused dark fruits. Blackberry, orange peel, and black currants. Full. Very long and thought-provoking. A wine that delivers power and finesse. Juicy and fresh.  (4/2016)

 Mouton Rothschild's 2015 is a wine built on finesse rather than power alone. Raspberry jam, spice, rose petal, pomegranate and blood orange make a very positive first impression. The 2015 is rich and intense on the palate, but never heavy. In 2015, harvest stretched from September 14 to October 2, a few days longer than normal. The blend, which was put together just before this tasting in late January 2016, is 82% Cabernet Sauvignon, 16% Merlot and 2% Cabernet Franc. (AG)  (5/2016)

 This wine is generous without being opulent. It has a straight line of bright acidity that shoots through the wine giving it a fresh character. At the same time, the Cabernet that dominates the blend offers some serious firm tannins. It is a wine that starts with fruit and will give fine fruit for many years to come. (RV)  (4/2016)

 82% Cabernet Sauvignon, 16% Merlot, 2% Cabernet Franc. 57% of the crop. Very majestic nose. Obviously first-growth quality. Savoury and plush in terms of texture. Restrained without being a wimp. Lovely scent. Dry finish but with some of Mouton's opulence before then. Very fine. Very exciting. Some saline sap as well as all the ripe fruit. (19/20 points)  (4/2016)

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.

Pauillac

- Pauillac is probably the most famous village in Bordeaux. Located between St. Julien and St. Estephe, it has more of the top ranked chateau than the other four appellations of the Haut Medoc. This area has three of the five premier cru classe wineries: Lafite Rothschild, Latour, and Mouton Rothschild. There are two of the top second-growths (Pichon Lalande and Pichon Baron) as well as several outstanding fourth and fifth-growth chateaux including Lynch Bages. Because of the gravely soils and great drainage, Pauillac has the ideal conditions to grow great Cabernet Sauvignon. The wines from this village are some of the longest-lived in Bordeaux.
