It feels tightly packed and withheld, the flavors wrapped in stony layers of minerality; the energy it gives off, a rumble of furmint acidity and volcanic stone, suggests there’s lots more to come. Made since the sixteenth century, Tokaji is an extremely sweet wine that was adored by the Russian Tsars. It is made in a manner similar to Sherry, and is reputed to be the longest lived, non-fortified wine in existence (a few hundred years is not unheard of). Hungary's continental climate--predictably cold winters and hot summers--makes it an ideal location for Sauvignon Blanc and Cabernet Sauvignon as well.
