80% Cabernet Sauvignon, 8% Petite Sirah, 7% Petit Verdot, 5% Merlot. Fermented in 100% stainless steel and aged in 75% neutral oak, 25% new French Oak. According to the winery: "Our Cabernet Sauvignon is a rustic wine with a deep, dark nose of blackberry, currants and cocoa, which show off the natural structure and power of each varietal in the finished blend. Enjoy with a sliced venison loin or hangar steak seared in cast iron and finished in the oven. Chop up some new potatoes; cover them with fresh rosemary and your favorite olive oil. Grab some black berries, sugar and a little vinegar, reduce and drizzle over the finished protein."

The 2014 Hunt and Harvest Napa Valley Cabernet Sauvignon, a bargain-priced—less than $25!—blend of 80% Cabernet Sauvignon, 8% Petite Sirah, 7% Petit Verdot and 5% Merlot, is here to offer a refreshing option (or as far as Cabs go, refreshment-wise). Fermented in 100% stainless steel and aged in 75% neutral oak and 25% new French oak, this is a leaner, lighter Cab, with tilled earth on the finish and lovely acidity. A heady but rustic wine with a deep, dark nose of blackberry, currants and cocoa, Hunt and Harvest Cab is a crowd-pleasing but sophisticated choice.

For fans of the previous vintage of this little known Napa winery, prepare yourselves for the newer, better vintage. This is a more rustic Cabernet that demonstrates complexity and depth, while still delivering rich, decadent appeal to fans of both Bordeaux and Napa Cab who are looking for something a little different. Blackberry, black currant, cocoa, graphite, roasted herbs, and chewy but sweet tannins cohere for a perfect pairing with a marbled steak and herbed potatoes.

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.
