2008 Jean-François Ganevat Chardonnay "Les Chalasses" Vieilles Vignes Côtes du Jura

 Chardonnay. In a yellow wax-sealed bottle. Dark honey colour. Bone dry with lots of acidity and serious tang. Only marginally funky with some faint cooking-apple aroma. Quite delicate and extremely racy. So much so that I would be wary of what I matched with this - nothing too heavy. Some goat's cheese perhaps? I suspect it will always be quite light footed.
