This sake is the seasonal version of the Junmai Ginjo 55 that the brewery sells yearly. Shiboritate means it was just pressed; namazake means it is unpasteurizd and genshu means it is undiluted with water. The result is a bright, lively, and full flavored sake. It is best served chilled and enjoyed on its own or with light foods. Watari Bune is an "heirloom" rice strain, meaning it has never been intercrossed with another varietal. It is also one of the parent strains to Yamada Nishiki, the most celebrated sake rice. Watari Bune had gone out of use for fifty years until this brewery revived it in 1989 with 14 grams of seeds. By 1966, they won a gold medal at Japan's National Sake Competition, and another in 1998.
