Jean-Michel Morel blends this wine from Pinot Blanc, Chardonnay and Ribolla Gialla grown in sandstone and slate. He ferments it in large oak vats then ages it in French barriques for a year. The result is an ephemeral white that touches every taste receptor with its delicate fragrance, a glance of honey and beeswax, a floral buzz that cleans up in the end. When I tasted this with Tara Q. Thomas after it had been open for several hours, the texture reminded her of a dandelion, the plushness of the yellow flower. Let it open in a decanter before serving with roast game birds.
Light golden color, this white is very ripe, almost overripe with dried pear, pineapple and mango character. It's full body, creamy in texture and a light yogurt, peach and papaya aftertaste. Lots going on here.
This Slovenian wine is golden straw colored, with aromas of white flowers and freshly cut honeycomb. It is round and opulent, with flavors of apple and peach and just a touch of saline minerality. (JJ)
