Milled to 70% and made in the ancient method known as Yamahai, a method of preparing the yeast starter that involves natural lactic bacteria, but eschews mixing the mash with poles. This usually results in a gamey, wilder sake. This is an example of a smooth Yamahai with a slight hint of licorice from the Tokushima region.
