 Tasted at BI Wine & Spirits' 10-Years-On tasting, the 2007 Latour was late-released last year, and I reviewed it at that time. This bottle reaffirmed my remarks from a few months ago albeit here within the context of all the other First Growth. I noticed that it has slightly more intensity than the Lafite-Rothschild, a touch of menthol infusing the black fruit, certainly more exotic than the Lafite or Mouton with that subtle hint of black olive. The palate is medium-bodied with fine tannin. There is good muscle and weight to this Latour, with impressive tension and energy on the saline finish. It will drink well over the next 15 years, possibly longer. (NM)  (6/2017)

 Good bright ruby-red. Rather backward nose hints at cassis, black cherry, shoe polish, graphite, minerals and spices. Sweet, broad and rich, but with enticing fresh minerality giving energy to the rather full-bodied middle palate. The wine's cassis fruit is complicated by an almost decadent floral element. Finishes perfumed and very long, with wonderfully lush, supple, fine-grained tannins. (ST)  (8/2010)

 Dark core with a wide, soft brick rim. Intense, fragrant, dark-red fruit. Savoury and almost dusty in a rocky minerality. Even a sour note on the palate, more elderberry than blackcurrant, tight and long. The tannins are very very fine, paper-fine and there’s terrific freshness in a more austere, dark style yet with a scented supple finish. 18.5/20 points (JH)  (2/2017)

Tasted at the property. This wine looks to be a cross between 1999 and 2004. Not a monster, but 91% cabernet sauvignon and 9% merlot. 16% press wine in blend...quite high. About normal yields here. This wine has earthy aromas and red fruits on the palate. Good weight on the palate and very smooth. Quite forward for Latour. Pure and not over-extracted. An elegant Latour! 11,000 cases.

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.

Pauillac

- Pauillac is probably the most famous village in Bordeaux. Located between St. Julien and St. Estephe, it has more of the top ranked chateau than the other four appellations of the Haut Medoc. This area has three of the five premier cru classe wineries: Lafite Rothschild, Latour, and Mouton Rothschild. There are two of the top second-growths (Pichon Lalande and Pichon Baron) as well as several outstanding fourth and fifth-growth chateaux including Lynch Bages. Because of the gravely soils and great drainage, Pauillac has the ideal conditions to grow great Cabernet Sauvignon. The wines from this village are some of the longest-lived in Bordeaux.
