Displaying a more saturated ruby/purple hue, the 2007 Cabernet Sauvignon Estate offers a sweet perfume of blueberries, black raspberries, black currants, and spring flowers. More open aromatically than on the palate, it reveals medium to full body, and an elegant, finesse-styled personality. Togni’s wines always have a Bordeaux-like structure. It is a gracious, savory effort that should age for 20-25 years. (RP)

Good ruby-red. Sexy huckleberry, black cherry, bitter chocolate and licorice on the ripe, briary nose; more expressive today than the Tanbark Hill. At once creamy in the middle and vinous, with slowly building flavors of kirsch, licorice and chocolate. Lovely ripe acidity adds to the impression of intensity. A juicy, firmly structured wine that finishes with very fine tannins. A classic version of this mountain Cabernet. (ST)

Bright ruby. Crushed mountain berries, kirsch and bitter chocolate on the nose, with its liqueur-like notes countered by a menthol element. Glyceral-rich if not exactly sweet, this huge wine spreads out to saturate the palate with dark berry and licorice flavor. This powerful, dense essence of mountain Cabernet boasts excellent delineation and outstanding subtle persistence but its big, youthfully dusty tannins still need time to resolve. It may last into its fourth decade of life in bottle. (ST)
