The sweet apples, such as Honeycrisp provide the backdrop for the tart varieties like Granny Smith. The bitter core and stems are removed from nearly overripe apples before they are sliced and juiced. We then place the resulting juice into small glass carboys. Next, we gently add eau de vie and a small amount of unprocessed sugar called turbinado to the apple juice and allow the blend to rest for several weeks. The final step before bottling is the preparation of the sour mash, which is what lends our New York Sour Apple Liqueur a natural tartness that cannot be achieved using artificial flavorings. We handcraft the sour mash, handcrafted from malted barley, and then pasteurized and filtered the mash before adding it to the glass carboys containing the apple juice and eau de vie blend. This freshly soured liqueur is matured for a few more weeks before bottling. We then hand bottle an entire small batch, which produces roughly 30 cases of our award winning liqueur. (Leopold Bros)

United States

- When people consider domestic wine, they normally think about the state of California. The fine viticultural Region within California, including the Napa Valley, Sonoma, Santa Cruz Mountains, Mendocino and Santa Barbara, are capable of growing grapes of world-class quality. But there's plenty of fabulous wine coming from other states, too. Oregon, Washington and New York are also causing eyebrows (and glassware) to be raised around the world.
