 Initial scents are floral and wheat cracker-like; aeration adds deeper, mildly sweet aromas of sap, fresh vanilla bean and light honey. Palate entry is finely balanced with wood, moderately sweet grain and acidity; by midpalate the alcohol warms the throat with off-dry flavors of charred oak, light toffee and sap. Heaven Hill's father and son Master Distillers team of Parker and Craig Beam developed the wheat formula for this whiskey using a minimum of 51% winter wheat as well as small amounts of corn and malted barley. "Our Bernheim Wheat Whiskey was still an experiment for us at Heaven Hill when we first put it up to age in January 2000," says Craig Beam. "We suspected it would turn out well, but even we were surprised at how it aged and matured...We like to think we've contributed something to the whiskey world that hadn't been done before. I hope you'll agree with us that this was a worthwhile experiment." Distillery Tasting Notes: Aroma: Mildly sweet with hints of vanilla and honey. Color: Bright amber. Taste: Hints of toffee, berries and spice. Finish: Toasted oak, elegant and warm.
