 Tasted from an ex-château bottle at BI Wine & Spirits Calon-Segur dinner in London. The 2000 Calon Segur is one of those wines that reminds you how great the millennial vintage could be. Now at fifteen years old, it has a brilliant, vivacious red berry nose infused with ash and cigar box aromas. The detail here is a beguiling and it just "sings" Saint Estèphe. The palate is medium-bodied with dense, firm tannin that provide a rigid backbone, but it is swathed in copious tobacco-drenched black fruit and a superb line of acidity. It finishes with a twist of bitter cherry on the finish that completes what is a deeply impressive Calon-Ségur; it might just outclass the 2005. (NM)  (10/2016)

 This is a solid, huge wine, with rich but very dry tannins. With its dense, almost black color, and its sense of brooding power, it promises long aging. It will never be in the opulent Bordeaux camp, despite its prominent new wood flavors, but will probably outlive all but a handful top wines. (RV)  (6/2003)

 Full red-ruby. Musky aromas of tart red berries, smoke and meat, with a light medicinal nuance. Suave on entry, then rather tightly wound, even a bit youthfully dry. Fairly rich wine, but the redcurrant, smoke and spice flavors are presently dominated by solid underlying structure. Finishes firmly tannic, with sneaky persistence. (ST)  (6/2003)

Unlike some Northern Médoc producers, Calon-Ségur said they had some outstanding vats of Cabernet Franc in 2000. The blend is 55% Cabernet Sauvignon, 35% Merlot and 10% Cabernet Franc. Very dark in color, the Calon-Ségur shows ripe cassis, chocolate and mocha aromas that linger in the mouth. The wine is ripe and forward upfront, with a good balance and middle. Quite flashy in style with some licorice undertones on the palate. The tannins are firm and ripe. This will be a long-keeping wine.

he pedigree is obvious here. The 2000 Calon-Ségur has it all: lovely weight, richness and texture with ample, ripe, sweet fruit. However, it also demonstrates how the very best wines of this stellar vintage are going to require further patience. The tannins are still quite firm. If I had, say, half a dozen bottles in my cellar (and I do), I would not look to open the next bottle for another three to five years at least.

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.

- The northern-most of the Medoc communes, St. Estephe is quickly becoming one of the favorite areas for both high quality and great value Bordeaux reds. While it has fewer classified growths than the other communes, it also boasts some of the hottest up and coming chateaux of the last several. The most famous chateaux are the second growths Montrose and Cos d'Estournel with Calon Segur (3rd growth), Lafon Rochet (4th growth), and Cos Labory (5th growth) rounding out the cru classe wines. Cabernet Sauvignon dominates the area, but plantings of Merlot are on the rise resulting in rounder, fatter, flashier wines than in years past.
